Gummy candy was invented in Germany by Haribo. Originally made from gum arabic, which is a natural gum made of the hardened sap of the acacia tree. The traditional gummy bear is made from a mixture of sugar, glucose syrup, starch, flavoring, food coloring, citric acid, and gelatin.
“Gummy candies descend from Turkish delight and even Japanese rice candy,” says candy historian Beth Kimmerle, author of Candy: A Sweet History. “But both of those are typically made with rice or corn starch versus gelatin.”
